A Colourful Pinwheel Treat

Mosaic Roll

Ingredients:

For the Dough:

225 grams all-purpose flour

3 tablespoons granulated sugar

½ teaspoon salt

125 grams cold unsalted butter, cubed

3-4 tablespoons ice water

For the Filling:

200 grams seedless raspberry jam

100 grams chopped walnuts (optional)

1 tablespoon lemon juice (optional)

For the Crumble:

  • 75 grams all-purpose flour
  • 50 grams cold unsalted butter, cubed
  • 50 grams brown sugar
  • ½ teaspoon ground cinnamon
  • Pinch of salt

Instructions:

  1. Make the dough: In a large bowl, whisk together the flour, sugar, and salt. Using a pastry cutter or your fingertips, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs. Slowly add ice water, a tablespoon at a time, until the dough just comes together. Be careful not to over-mix.
  2. Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare the filling: In a small bowl, combine the raspberry jam with lemon juice (if using). If adding walnuts, chop them into small pieces and stir them into the jam mixture.
  4. Make the crumble: Combine the flour, brown sugar, cinnamon, and salt in a medium bowl. Using a pastry cutter or your fingertips, cut in the cold butter until the mixture resembles coarse crumbs.
  5. Assemble the mosaic roll: Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper. On a lightly floured surface, roll out the chilled dough into a large rectangle, about ¼ inch thick. Spread the jam filling evenly over the dough, leaving a 1-inch border on one long side.
  6. Create the mosaic pattern: Starting from the short end without the border, roll the dough up tightly into a log. Gently pinch the seam to seal. Slice the log into 1-inch thick rounds. Arrange the slices on the prepared baking sheet, cut-side down, leaving a little space between them. Sprinkle the crumble topping evenly over the top of the mosaic roll slices.
  7. Bake: Bake for 25-30 minutes, or until the crumble is golden brown and the filling is bubbly.
  8. Cool and serve: Let the mosaic roll cool slightly on the baking sheet before transferring it to a wire rack to cool completely. Slice and enjoy!

Tips:

  • For a richer flavour, toast the walnuts before adding them to the filling.
  • You can substitute the raspberry jam with other flavours like apricot, blueberry, or cherry.
  • If the dough becomes too sticky while rolling out, chill it for another 10 minutes.
  • Drizzle the cooled mosaic roll with melted white or dark chocolate for an extra decadent touch.

Wheat-sheaf with Everlasting Flowers

Everlasting Flowers Arrangement

Wheat-sheaf with Everlasting  Flowers

Materials:

Dry wheat stalks

Selection of pink everlasting flowers (such as statice, globe amaranth, or strawflowers)

Floral twine or ribbon

Scissors

(Optional) Floral wire

Instructions:

  1. Gather your materials. Make sure the wheat stalks are dry and brittle-free. Choose a variety of pink everlasting flowers in different shades and textures for visual interest.
  2. Arrange the wheat stalks. Hold the wheat stalks together at the base, forming a compact bundle. You can create a tighter or looser bundle depending on your preference.
  3. Secure the bundle. Wrap the floral twine or ribbon securely around the base of the wheat stalks multiple times. Tie a knot to tighten and create a finished look.
  4. Incorporate the everlasting flowers. Start by tucking the stems of the pink everlasting flowers in between the wheat stalks. Distribute them evenly throughout the wheat-sheaf, aiming for a natural look.
  5. Arrange for visual appeal. Alternate flower sizes, textures, and shades of pink to create a visually interesting composition. You can use shorter-stemmed flowers towards the centre and taller ones on the outside for a layered effect.
  6. Secure the flowers (optional). If the everlasting flowers have loose stems or you want extra security, use floral wire to attach the flower stems to the wheat stalks.
  7. Finishing touches. Fluff out the wheat stalks and everlasting flowers to achieve your desired fullness. You can trim any stems that protrude unevenly from the wheat-sheaf for a neater look.

Tips:

  • Choose everlasting flowers in various shades of pink for a more vibrant look.
  • Experiment with different flower types and textures to add visual interest.
  • Secure the bundle tightly to ensure the wheat-sheaf maintains its shape over time.
  • Spritz the everlasting flowers with a light mist of hairspray to preserve their colour and prevent dust accumulation.

Caterpillar Cookies

Caterpillar Cookies

Ingredients:

125 grams unsalted butter, softened

80 grams powdered sugar

½ teaspoon vanilla extract

1 egg yolk

200 grams cornstarch

30 grams all-purpose flour

Green food colouring

Chocolate chips (for eyes)

Instructions:

  1. Cream butter and sugar: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Beat in the vanilla extract and egg yolk until well combined.
  2. Dry ingredients: In a separate bowl, whisk together the cornstarch and all-purpose flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Colour the dough: Divide the dough into two portions. Add a few drops of green food colouring to one portion and mix well until evenly green. Leave the other portion plain.
  4. Shape the caterpillars: Roll out the plain dough on a lightly floured surface to about ¼ inch thickness. Cut the dough into long, thin strips, about ½ inch wide. Roll out the green dough to a similar thickness and cut into even thinner strips, about ¼ inch wide.
  5. Assemble caterpillars: Place a green dough strip on top of a plain dough strip, gently pressing them together to form a two-toned caterpillar body.
  6. Make impressions: To create the caterpillar segments, use a fork to gently press down along the length of the dough, creating indentations.
  7. Add eyes: Place two chocolate chips on the top of the caterpillar's head for eyes.
  8. Bake: Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper. Arrange the caterpillar cookies on the baking sheet, leaving space between them for spreading. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Cool: Let the cookies cool completely on the baking sheet before transferring them to a wire rack to cool completely.

Tips:

  • For a richer flavour, use brown butter instead of regular butter.
  • If the dough becomes too sticky, add a tablespoon more of cornstarch.
  • You can use other colours of food colouring to create different coloured caterpillars.
  • Get creative with the eyes! You can use sprinkles, chopped nuts, or even mini marshmallows instead of chocolate chips.

Beef Stir-Fry with Vegetables

Beef Stir-Fry with Vegetables

Ingredients:

1 pound flank steak, thinly sliced against the grain

1 tablespoon cornstarch

2 tablespoons soy sauce

1 tablespoon vegetable oil

1 medium onion, sliced

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup frozen peas

2 cloves garlic, minced

1/2 inch ginger, grated (optional)

1/4 cup chicken broth

1 tablespoon brown sugar

1 tablespoon rice vinegar

Salt and freshly ground black pepper, to taste

Cooked white or brown rice, for serving

Instructions:

  1. In a bowl, combine the sliced beef, cornstarch, and soy sauce. Toss to coat and marinate for at least 15 minutes.
  2. Heat the vegetable oil in a large wok or skillet over high heat. Add the beef and stir-fry for 3-4 minutes, or until browned and cooked through. Remove the beef from the pan and set aside.
  3. Add the onion and bell pepper to the pan and stir-fry for 2-3 minutes, or until softened.
  4. Add the cherry tomatoes and peas, and stir-fry for another minute.
  5. Push the vegetables to the side of the pan and add the garlic and ginger (if using). Stir-fry for 30 seconds, until fragrant.
  6. Pour in the chicken broth, brown sugar, and rice vinegar. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  7. Return the beef to the pan and toss to coat in the sauce. Season with salt and pepper to taste.
