Sweet Potato Casserole with Pecans
Ingredients:
- 3 large sweet potatoes, peeled and cubed
- 1/4 cup unsalted butter, melted
- 1/4 cup brown sugar
- 1/4 cup milk
- 1 egg, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 cup chopped pecans
Instructions:
- Preheat oven to 350°F (175°C).
- Place sweet potatoes in a large pot of boiling water and cook until tender, about 15-20 minutes. Drain well.
- In a large bowl, mash the sweet potatoes until smooth.
- Stir in the melted butter, brown sugar, milk, egg, salt, and cinnamon until well combined.
- Pour the sweet potato mixture into a greased 9x13 inch baking dish.
- Sprinkle the chopped pecans over the top.
- Bake for 30-35 minutes, or until the casserole is set and lightly browned.
- Let cool for 10 minutes before serving.
