Sweet Potato Casserole with Pecans

Ingredients:

  • 3 large sweet potatoes, peeled and cubed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped pecans

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Place sweet potatoes in a large pot of boiling water and cook until tender, about 15-20 minutes. Drain well.
  3. In a large bowl, mash the sweet potatoes until smooth.
  4. Stir in the melted butter, brown sugar, milk, egg, salt, and cinnamon until well combined.
  5. Pour the sweet potato mixture into a greased 9x13 inch baking dish.
  6. Sprinkle the chopped pecans over the top.
  7. Bake for 30-35 minutes, or until the casserole is set and lightly browned.
  8. Let cool for 10 minutes before serving.
