Koko Alaisa is a beloved Samoan dessert that combines the richness of cocoa with the creamy sweetness of coconut milk. It's a simple yet comforting dish that's perfect for a warm evening.

Ingredients:

  • 1 cup short-grain rice
  • 6 cups water
  • 1 cup coconut milk (or coconut cream for a richer pudding)
  • ½ cup cocoa powder (or grated Koko Samoa for a traditional flavour)
  • ½ cup granulated sugar (adjust to your preference)
  • Optional: orange peel or a few drops of orange extract, for flavour

Instructions:

  1. Cook the Rice:
    • Rinse the rice under cold water until the water runs clear.
    • In a medium saucepan, combine the rice and water.
    • Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and most of the water is absorbed.
  2. Add Flavour:
    • If using, add the orange peel to the cooked rice. If using orange extract add after cooking is finished.
    • Add cocoa powder (or grated Koko Samoa), sugar, and coconut milk to the saucepan.
    • Stir well to combine.
  3. Simmer:
    • Return the mixture to a simmer over low heat.
    • Cook for another 5-10 minutes, stirring occasionally, until the pudding has thickened to your desired consistency.
    • remove the orange peel if you used it.
  4. Serve:
    • Serve the Koko Alaisa warm or chilled.
