- 1/4 cup sour cream
- 1 ripe avocado, pitted and peeled
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Cocktail sauce, for serving
- Lemon wedges, for garnish
Instructions
- Cook the shrimp: Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they are pink and cooked through. Drain the shrimp and rinse them with cold water to stop the cooking process.
- Make the avocado cream: In a food processor, combine the mayonnaise, sour cream, avocado, lime juice, salt, and pepper. Process until smooth and creamy.
- Assemble the shrimp cocktail: Arrange the cooked shrimp in a cocktail glass or bowl. Top with the avocado cream. Serve immediately with cocktail sauce and lemon wedges.
