Shrimp Cocktail with Avocado Cream

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 ripe avocado, pitted and peeled
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cocktail sauce, for serving
  • Lemon wedges, for garnish

Instructions

  1. Cook the shrimp: Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they are pink and cooked through. Drain the shrimp and rinse them with cold water to stop the cooking process.
  2. Make the avocado cream: In a food processor, combine the mayonnaise, sour cream, avocado, lime juice, salt, and pepper. Process until smooth and creamy.
  3. Assemble the shrimp cocktail: Arrange the cooked shrimp in a cocktail glass or bowl. Top with the avocado cream. Serve immediately with cocktail sauce and lemon wedges.
