Honey-Glazed Carrots
Ingredients:
- 1 pound carrots, peeled and cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/4 cup honey
- 1 tablespoon butter, melted
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the carrots with olive oil, salt, and pepper.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender.
- In a small saucepan, combine honey and butter. Heat over low heat until melted and combined.
- Remove carrots from oven and drizzle with honey-butter mixture.
- Return carrots to oven for 5 minutes, or until glaze is bubbly.
- Serve immediately.
