Honey-Glazed Carrots


Ingredients:

  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 1 tablespoon butter, melted
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, salt, and pepper.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender.
  5. In a small saucepan, combine honey and butter. Heat over low heat until melted and combined.
  6. Remove carrots from oven and drizzle with honey-butter mixture.
  7. Return carrots to oven for 5 minutes, or until glaze is bubbly.
  8. Serve immediately.
