Roasted Asparagus with Lemon and Parmesan

Ingredients:

  • 1 pound asparagus, trimmed
  •  1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon zest
  • 1/4 cup grated Parmesan cheese


    Instructions:

    1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
    2. In a large bowl, toss the asparagus with olive oil, salt, and pepper.
    3. Spread the asparagus in a single layer on the prepared baking sheet.
    4. Roast for 10-12 minutes, or until the asparagus is tender and slightly browned.
    5. Remove from oven and sprinkle with lemon zest and Parmesan cheese.
    6. Serve immediately.
