Nutty Bread Pudding (Qatari Cuisine)

 

Umm Ali Bread Pudding

Ingredients:

1 sheet frozen puff pastry, thawed and cut into 1-inch squares

1/2 cup unsalted butter, melted

1 cup granulated sugar

4 cups whole milk

1/2 cup heavy cream

1 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

1/4 teaspoon ground nutmeg

1 cup chopped nuts (almonds, pistachios, or a mixture)

1/2 cup raisins

1/2 cup shredded coconut (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Prepare the pastry: In a large bowl, toss the puff pastry squares with melted butter and 1/4 cup of the sugar. Spread the coated pastry pieces on a baking sheet and bake for 10-15 minutes, or until golden brown and crispy. Remove from the oven and set aside.
  3. Make the milk mixture: In a saucepan, combine milk, heavy cream, remaining 3/4 cup of sugar, cinnamon, cardamom, and nutmeg. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture simmers gently. Do not boil.
  4. Assemble the Umm Ali: In the prepared baking dish, spread half of the toasted puff pastry squares. Sprinkle with half of the nuts and raisins. Pour half of the hot milk mixture over the top. Repeat the layers with remaining pastry, nuts, raisins, and milk mixture.
  5. Bake: Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for another 15-20 minutes, or until the top is golden brown and the edges are bubbly.
  6. Garnish and serve: While the Umm Ali is still hot, sprinkle with the shredded coconut (if using). Let it cool slightly before serving. You can serve it warm or at room temperature.

Tips:

  • For a richer flavour, substitute full-fat milk and cream for the lighter versions.
  • If you don't have heavy cream, you can use all milk, but the texture will be slightly less creamy.
  • Feel free to adjust the spices to your preference. You can also add a pinch of saffron for a luxurious touch.
  • Toasted sliced almonds or chopped dates make for delicious alternative toppings.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven before serving.
