Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Combine all meatball ingredients in a large bowl and mix gently with your hands until just combined. Don't over-mix, as this can make the meatballs tough.
- Form the mixture into 1-inch meatballs. Place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until the meatballs are cooked through and golden brown.
- While the meatballs bake, prepare the teriyaki glaze. In a small saucepan, whisk together the soy sauce, mirin, brown sugar, honey, cornstarch, garlic, and ginger.
- Bring the glaze to a simmer over medium heat, stirring constantly until thickened and slightly reduced, about 5 minutes.
- Once the meatballs are done baking, add them to the pan with the teriyaki glaze. Toss gently to coat the meatballs evenly.
- Simmer for an additional 2-3 minutes, or until the glaze is thickened and sticky.
- Serve immediately over steamed rice, with your favourite vegetables, or as an appetiser with toothpicks.
