This recipe combines the classic flavours of schnitzel with a vibrant Asian twist. The sesame seed crust adds a delightful crunch, while the sweet and sour sauce provides a tangy counterpoint to the savoury schnitzel.

Ingredients:

For the Schnitzel:

  • 4 boneless, skinless chicken breasts, pounded to about 1/4-inch thickness
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko bread crumbs
  • 1/4 cup sesame seeds
  • Salt and pepper to taste
  • Vegetable oil for frying1

For the Sweet and Sour Sauce:

  • 1 tablespoon vegetable oil
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1/4 cup chicken broth
  • 1/4 teaspoon red pepper flakes (optional)
  • Cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water)

Instructions:

  1. Prepare the Schnitzel:
    • Season the chicken breasts with salt and pepper.
    • Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat thoroughly with the panko bread crumbs mixed with sesame seeds.2
  2. Cook the Schnitzel:
    • Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
    • Carefully place the breaded chicken breasts in the hot oil and fry until golden brown and cooked through, about 3-5 minutes per side.
    • Remove the schnitzel from the oil and drain on paper towels.
  3. Make the Sweet and Sour Sauce:
    • Heat the vegetable oil in a saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
    • Stir in the ketchup, apple cider vinegar, soy sauce, honey, brown sugar, and chicken broth. Bring to a simmer.
    • In a small bowl, whisk together the cornstarch slurry.
    • Slowly pour the cornstarch slurry into the simmering sauce, whisking constantly until the sauce thickens.
    • Stir in the red pepper flakes (if using) and season with salt and pepper to taste.
  4. Serve:
    • Place the schnitzel on plates and top with the sweet and sour sauce.
    • Serve immediately with your favourite sides, such as steamed rice or noodles.
