Black Forest Roulade with Five Spice Plums

Ingredients:
For the Roulade:
- 4 large eggs, separated
- ¾ cup granulated sugar
- ½ cup all-purpose flour
- ¼ cup cocoa powder
- Pinch of salt
For the Five Spice Plums:
- 1 lb ripe plums, pitted and sliced
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon five-spice powder
- 1 tablespoon lemon juice
For the Filling:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup Chocolate shavings
Instructions:
Prepare the Plums:
- In a medium saucepan, combine plums, sugar, cornstarch, five-spice powder, and lemon juice.
- Cook over medium heat, stirring occasionally, until plums are soft and sauce thickens (about 8-10 minutes).
- Let cool completely.
Prepare the Roulade:
- Preheat oven to 350°F (175°C). Line a 10x15 inch jelly roll pan with parchment paper.
- In a clean bowl, beat egg whites until stiff peaks form. Gradually add ¼ cup sugar, beating until glossy.
- In a separate bowl, whisk egg yolks with remaining ½ cup sugar until pale and thick.
- Sift flour, cocoa powder, and salt over the yolk mixture and gently fold.
- Gently fold the egg whites into the yolk mixture in two batches, being careful not to deflate.
- Pour batter into the prepared pan and spread evenly.
- Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- Remove from oven and let cool for 5 minutes.
- Invert cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off parchment paper.
- Roll up the cake with the towel starting from the short end and let cool completely.
Assemble the Roulade:
- In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cake and spread the whipped cream evenly.
- Spread the cooled five-spice plums over the whipped cream. Sprinkle chocolate shavings.
- Roll the cake back up tightly without the towel.
- Place seam down on a serving platter.
- Chill for at least 1 hour before serving.

Tips:
