Introduction

Octopus salad is a refreshing and flavourful dish that combines the tender texture of grilled octopus with the crispness of fresh vegetables. The bright lemon vinaigrette adds a tangy citrus flavour that complements the seafood. This dish is perfect for a light and healthy meal.

Ingredients

  • 1 pound fresh octopus, cleaned and cut into pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill

For the vinaigrette:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Grill the octopus: Preheat your grill to medium-high heat. Drizzle the octopus with olive oil and season with salt and pepper. Grill for 5-7 minutes per side, or until cooked through and slightly charred. Let cool before cutting into bite-sized pieces.
  2. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.
  3. Combine the ingredients: In a large bowl, combine the grilled octopus, cherry tomatoes, cucumber, red onion, parsley, and dill.
  4. Toss with the vinaigrette: Drizzle the vinaigrette over the salad and toss to coat evenly.
  5. Serve: Serve immediately or chill for later.
