Steamed Egg Custard for Chinese New Year

Yields: 4 servings Prep time: 15 minutes Cook time: 20 minutes

Ingredients:

  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon sugar (optional)
  • 1/4 teaspoon sesame oil (optional)
  • 1/4 cup chopped scallions (optional)

Instructions:

Get Ready:

  1. Preheat your steamer or a large pot of water to simmering.

Make the Egg Mixture:

  1. In a bowl, whisk together the eggs, milk, water, salt, and pepper. If using, add sugar and sesame oil.
  2. Strain the egg mixture through a fine-mesh sieve into a heatproof bowl or ramekins.
  3. If using scallions, sprinkle them evenly over the egg mixture.

Steam the Custard:

  1. Place the bowl or ramekins in the steamer or pot of simmering water. Cover and steam for 15-20 minutes, or until the custard is set and slightly jiggly in the centre.
  2. Remove the custard from the steamer and let it cool slightly before serving.

Serve:

  1. Serve the steamed egg custard hot or cold. You can garnish with additional scallions or a drizzle of soy sauce.
