Lo Mein with Mixed Vegetables for Chinese New Year

Ingredients:
- 1 pound dried lo mein noodles
- 1 tablespoon vegetable oil
- 1 pound mixed vegetables (such as broccoli, carrots, snap peas, and mushrooms)
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1/4 cup chopped green onions
Instructions:
- Bring a large pot of water to a boil. Add the lo mein noodles and cook for 8-10 minutes, or until tender. Drain the noodles and rinse with cold water.
- Heat the vegetable oil in a large skillet over medium heat. Add the mixed vegetables and cook for 5 minutes, or until tender-crisp.
- In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, ginger, and garlic powder.
- Add the noodles and sauce to the skillet with the vegetables. Cook for 2 minutes, or until the noodles are heated through and coated with the sauce.
- Serve the lo mein immediately, garnished with green onions.
