Braised Bok Choy with Shiitake Mushrooms

Braised Bok Choy with Shiitake Mushrooms


Ingredients:

  • 1 tablespoon vegetable oil
  • 1 pound bok choy, trimmed and chopped
  • 1/2 cup dried shiitake mushrooms, soaked in hot water for 30 minutes
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 cup chopped green onions

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat. Add the bok choy and cook until wilted.
  2. Drain the shiitake mushrooms and squeeze out any excess water. Slice the mushrooms and add them to the skillet.
  3. Add the soy sauce, rice vinegar, sugar, and sesame oil. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
  4. Stir in the green onions and serve immediately.

Tips:

  • For a richer flavour, use chicken broth instead of water.
  • For a spicier dish, add a pinch of red pepper flakes.
  • To make this dish ahead of time, cook the bok choy and mushrooms separately. Then, when you are ready to serve, combine the two and heat through.
