Braised Bok Choy with Shiitake Mushrooms
Ingredients:
- 1 tablespoon vegetable oil
- 1 pound bok choy, trimmed and chopped
- 1/2 cup dried shiitake mushrooms, soaked in hot water for 30 minutes
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon sesame oil
- 1/4 cup chopped green onions
Instructions:
- Heat the vegetable oil in a large skillet over medium heat. Add the bok choy and cook until wilted.
- Drain the shiitake mushrooms and squeeze out any excess water. Slice the mushrooms and add them to the skillet.
- Add the soy sauce, rice vinegar, sugar, and sesame oil. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
- Stir in the green onions and serve immediately.
Tips:
- For a richer flavour, use chicken broth instead of water.
- For a spicier dish, add a pinch of red pepper flakes.
- To make this dish ahead of time, cook the bok choy and mushrooms separately. Then, when you are ready to serve, combine the two and heat through.
