Almond Cookies for Chinese New Year

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup almond flour

  • 1 egg yolk
  • 1/4 cup sliced almonds

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, almond flour, sugar, and salt.
  3. In a separate bowl, whisk together vegetable oil, almond extract, and egg yolk.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Shape the dough into small balls, about 1 inch in diameter.
  6. Place the dough balls on the prepared baking sheets, leaving some space between each cookie.3
  7. Gently press each cookie with the bottom of a glass or your palm to flatten slightly.
  8. Top each cookie with a few sliced almonds.
  9. Bake for 12-15 minutes, or until the edges are golden brown.
