Steamed Buns with Vegetable Filling: A Fluffy and Flavourful Delight

Steamed buns, or baozi, are a popular Chinese dish, often enjoyed during Chinese New Year celebrations. These fluffy buns filled with a savoury vegetable filling are a healthier alternative to traditional meat-filled baozi.

Ingredients:

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1 cup warm water

For the Filling:

  • 1 cup shredded cabbage
  • 1/2 cup chopped carrots
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper

Instructions:

Make the Dough:

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, yeast, sugar, and baking powder.
  2. Add Warm Water: Gradually add the warm water to the dry ingredients, mixing until a dough forms.
  3. Knead the Dough: Knead the dough on a lightly floured surface for 10-15 minutes, or until smooth and elastic.
  4. Proof the Dough: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.1

Prepare the Filling:

  1. Sauté Vegetables: Heat a wok or large skillet over medium heat. Add a little oil and sauté the garlic until fragrant.
  2. Add Vegetables: Add the cabbage, carrots, and green onions to the pan. Stir-fry until the vegetables are tender-crisp.
  3. Season the Filling: Season the vegetables with soy sauce, sesame oil, and black pepper.

Assemble and Steam the Buns:

  1. Shape the Buns: Divide the dough into equal portions. Roll each portion into a ball and flatten it slightly.
  2. Add Filling: Place a spoonful of the vegetable filling in the centre of each dough ball.
  3. Seal the Buns: Pinch the edges of the dough together to seal the filling inside.
  4. Steam the Buns: Place the buns in a steamer basket lined with parchment paper. Steam for 10-12 minutes, or until the buns are cooked through and fluffy.

Serve:

Serve the steamed buns hot with your favourite dipping sauce, such as soy sauce or a sweet chilli sauce.
