Traditional egg rolls are often deep-fried, but this air-fried version offers a healthier alternative without sacrificing flavour or texture. These crispy, golden-brown rolls are filled with a savoury mixture of vegetables and can be enjoyed as an appetiser or snack.

- 1 package spring roll wrappers
For the Filling:
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 teaspoon soy sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
Instructions:
Preparing the Filling:
- Sauté Vegetables: Heat a wok or large skillet over medium heat. Add a little oil and sauté the garlic until fragrant.
- Add Vegetables: Add the cabbage, carrots, and green onions to the pan. Stir-fry until the vegetables are tender-crisp.
- Season the Filling: Season the vegetables with soy sauce, sesame oil, and black pepper.

- Place Filling on Wrapper: Lay a spring roll wrapper on a clean surface. Place a spoonful of the vegetable filling in the centre of the wrapper.
- Fold and Roll: Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, tucking in the ends as you go.
- Seal the Roll: Moisten the edge of the wrapper with a little water to seal it.

- Preheat Air Fryer: Preheat your air fryer to 380°F (190°C).
- Air Fry: Place the egg rolls in the air fryer basket, making sure they are not touching. Air fry for 8-10 minutes, or until golden brown and crispy.
