Herb-Roasted Turkey: A Classic, Lean and Flavourful Feast
Ingredients:
- 1 (10-12 pound) turkey, thawed
- 1/4 cup fresh herbs (such as thyme, rosemary, sage, oregano), chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, quartered
- 1 carrot, quartered
- 1 celery stalk, quartered
- 1 cup chicken broth
Instructions:
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare the Turkey: Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out with cold water and pat dry with paper towels.
- Season the Turkey: In a small bowl, combine the chopped herbs, olive oil, salt, and pepper. Rub this mixture all over the turkey, both inside and out.
- Stuff the Cavity: Place the onion, carrot, and celery inside the turkey cavity.
- Roast the Turkey: Place the turkey, breast side up, on a roasting rack in a roasting pan. Pour the chicken broth into the bottom of the pan.
- Roast and Baste: Roast the turkey in the preheated oven for 30 minutes. Then, reduce the temperature to 350°F (175°C) and continue roasting for 2-3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- Basting: Every 30 minutes, baste the turkey with the pan juices.
- Resting: Once the turkey is cooked, remove it from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute, resulting in a moist and flavourful bird.
