Green Bean Casserole with Crispy Shallots

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour
  • 1/4 cup butter, melted
  • 1 1/2 cups milk
  • 1/2 cup chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crispy fried shallots

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes, or until tender-crisp. Drain well.
  3. In a large bowl, combine the cooked green beans, melted butter, milk, onion, salt, and pepper.
  4. Pour the mixture into a greased 9x13 inch baking dish.
  5. Bake for 30 minutes, or until the casserole is bubbly and set.
  6. Sprinkle with chopped parsley and crispy fried shallots.
  7. Serve immediately.
