Jackfruit Tacos with Mango Salsa
Ingredients:
For the Jackfruit Tacos:
- 1 can (14 oz) young green jackfruit, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon chilli powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 8 whole-wheat tortillas
For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeño pepper, minced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions:
- Prepare the jackfruit: In a large skillet over medium heat, heat olive oil. Add the drained and rinsed jackfruit and season with chilli powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for 10-15 minutes, or until the jackfruit is browned and heated through.
- Make the mango salsa: In a small bowl, combine the diced mango, red onion, jalapeño pepper, cilantro, lime juice, salt, and pepper. Stir to combine.
- Assemble the tacos: Warm the whole-wheat tortillas on a griddle or in a skillet. Place a portion of the shredded jackfruit on each tortilla and top with the mango salsa. Serve immediately.
