Vertical Veggie Stir-Fry

Ingredients:

1 tablespoon olive oil

1/2 cup chopped onions

1/2 cup chopped carrots

1/2 cup chopped broccoli

1/2 cup chopped snow peas

1/4 cup chopped oyster mushrooms

1/4 cup plant-based oyster sauce

1 tablespoon soy sauce

1 teaspoon sesame oil

1/4 cup chopped cilantro

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onions and carrots and cook for 5 minutes, or until softened.
  3. Add the broccoli, snow peas, and oyster mushrooms and cook for 3 minutes, or until slightly tender.
  4. Add the plant-based oyster sauce, soy sauce, and sesame oil and stir to combine.
  5. Cook for 1 minute, or until the sauce is heated through.
  6. Remove from heat and stir in the cilantro.
  7. Serve immediately over rice or quinoa.
