Next-Gen Meatball Subs
A hearty sub roll filled with plant-based meatballs made with mycoprotein (fungus-based meat substitute) and a medley of roasted vegetables
Ingredients:
For the meatballs:
1 cup mycoprotein
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg, beaten
1/4 cup chopped onion
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
- For the roasted vegetables:
- 1 large bell pepper, cut into 1-inch pieces
- 1 medium onion, cut into 1-inch wedges
- 1 medium zucchini, cut into 1/2-inch slices
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the sub rolls:
- 4 sub rolls
- 1/4 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
Instructions:
- Make the meatballs: In a large bowl, combine all the ingredients for the meatballs. Mix well until all the ingredients are combined.
- Form the meatballs: Using your hands, form the mixture into 1-inch meatballs.
- Roast the vegetables: Preheat the oven to 400°F (200°C). Toss the bell pepper, onion, and zucchini with the olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender.
- Cook the meatballs: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the meatballs for 5-7 minutes per side, or until cooked through.
- Assemble the subs: Cut the sub rolls in half lengthwise. Spread a thin layer of marinara sauce on each half.
- Add the meatballs and vegetables: Fill each sub roll with meatballs and roasted vegetables.
- Top with cheese: Sprinkle shredded mozzarella cheese on top of the subs.
- Broil the subs: Broil the subs for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve: Serve the subs immediately with additional marinara sauce, if desired.
