 AeroJack Pancakes: Light and Protein-Packed Pancakes with Lab-Grown Jackfruit

Ingredients:

1 cup all-purpose flour

2 tablespoons unsweetened plant-based milk powder

1/4 teaspoon salt

1/4 cup shredded lab-grown jackfruit

1 tablespoon melted coconut oil

Instructions:

  1. Whisk dry ingredients: In a medium bowl, whisk together the flour, plant-based milk powder, baking powder, and salt.
  2. Combine wet ingredients: In a separate bowl, whisk together the plant-based milk, melted coconut oil, and vanilla extract.
  3. Fold wet into dry: Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to over-mix, as this can make the pancakes tough.
  4. Incorporate jackfruit: Gently fold in the shredded lab-grown jackfruit.
  5. Heat pan: Preheat a lightly oiled griddle or frying pan over medium heat.
  6. Cook pancakes: Pour about 1/4 cup of batter per pancake onto the preheated pan. Let cook for 2-3 minutes, or until bubbles appear on the surface and the edges begin to set.
