AeroJack Pancakes: Light and Protein-Packed Pancakes with Lab-Grown Jackfruit
Ingredients:
1 cup all-purpose flour
2 tablespoons unsweetened plant-based milk powder
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup shredded lab-grown jackfruit
1 1/4 cups unsweetened plant-based milk
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
Instructions:
- Whisk dry ingredients: In a medium bowl, whisk together the flour, plant-based milk powder, baking powder, and salt.
 - Combine wet ingredients: In a separate bowl, whisk together the plant-based milk, melted coconut oil, and vanilla extract.
 - Fold wet into dry: Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to over-mix, as this can make the pancakes tough.
 - Incorporate jackfruit: Gently fold in the shredded lab-grown jackfruit.
 - Heat pan: Preheat a lightly oiled griddle or frying pan over medium heat.
 - Cook pancakes: Pour about 1/4 cup of batter per pancake onto the preheated pan. Let cook for 2-3 minutes, or until bubbles appear on the surface and the edges begin to set.
 - Puff the pancakes (optional): Here comes the futuristic twist! If you have a handheld milk frother, use it to gently introduce air bubbles into the cooking batter on each pancake. This will help create a lighter and fluffier texture.
 - Flip and cook: Flip the pancakes and cook for another 1-2 minutes, or until golden brown on the bottom.
 - Serve: Serve immediately with your favourite toppings, such as fresh fruit, maple syrup, nut butter, or a dollop of yogurt.

 - If you don't have a milk frother, you can try whisking the batter vigorously just before cooking to incorporate some air bubbles.
 - You can experiment with different flavours by adding a teaspoon of your favourite spice, such as cinnamon or nutmeg, to the batter.
 - Leftover pancakes can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a microwave or toaster oven.
 - Lab-grown jackfruit is a relatively new product, so its availability may vary. You might be able to find it online or at specialty grocery stores.
