Moist Gluten-Free Banana Bread

Ingredients:

2 cups Bob's Red Mill Gluten-Free All-Purpose Flour (or your preferred gluten-free flour blend)

4-5 very ripe bananas (about 1 ½ cups mashed)

½ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

2 tablespoons milk (dairy or dairy-free)

½ teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

½ - 1 cup chocolate chips (optional)

½ teaspoon salt

Instruments:

  • Large mixing bowl
  • Masher or fork
  • Electric mixer (handheld or stand)
  • Measuring cups and spoons
  • Loaf pan (8x5 inch)
  • Parchment paper (optional)
  • Toothpick

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease your loaf pan with butter or cooking spray.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together the softened butter and sugar with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mash your bananas in a separate bowl and add them to the wet ingredients along with the milk. Mix well until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't over-mix!
  7. Fold in the chocolate chips (if using) with a spatula.
  8. Pour the batter into your prepared loaf pan.
  9. Bake for 50-55 minutes, or until a toothpick inserted into the centre comes out clean.
  10. Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Tips:

  • For an extra moist banana bread, use very ripe bananas with plenty of brown spots.
  • If your batter seems too thick, add a tablespoon or two of additional milk.
  • Want to add some nuts? Fold in chopped walnuts, pecans, or almonds for extra flavour and texture.
  • To make this recipe dairy-free, use dairy-free butter or vegan butter and dairy-free milk.
