Green Bean and White Chocolate Chunk Cookies

Ingredients:

For the Cookies:

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup packed light brown sugar

2 large eggs

2 tsp pure vanilla extract

2 ½ cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 ½ cups chopped steamed or roasted green beans (cooled)

1 cup white chocolate chips

Instruments:

  • Mixing bowls (2)
  • Electric mixer (handheld or stand)
  • Rubber spatula
  • Baking sheets
  • Parchment paper
  • Cookie scoop (optional)

Instructions:

  1. Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.
  2. **In a large mixing bowl, cream together the softened butter and sugars until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't over-mix.
  4. Fold in the chopped green beans and white chocolate chips using a rubber spatula.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space for spreading. You can use a cookie scoop for even portions.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centres are slightly soft.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Tips:

  • Steaming or roasting the green beans beforehand helps soften them and removes some of the raw green bean flavour.
  • You can adjust the amount of chopped green beans based on your preference. Start with 1 cup and add more for a stronger green bean presence.
  • If you don't have white chocolate chips, you can substitute them with chopped nuts, dried fruit like cranberries or raisins, or even dark chocolate chips.
  • For a chewier cookie, bake for an additional minute or two.
  • Let the cookies cool completely before storing them in an airtight container at room temperature. They will keep for up to 3 days.
