Pineapple & Cucumber Salad

Ingredients (Serves 4):

1/2 medium pineapple, peeled, cored, and diced

1 English cucumber, thinly sliced

1/4 red onion, thinly sliced (optional)

1/4 cup fresh cilantro, chopped

2 tablespoons fresh mint, chopped (optional)

1/4 cup lime juice

2 tablespoons olive oil

1/2 teaspoon honey (or agave nectar)

1/4 teaspoon salt

Pinch of black pepper

Instructions:

  1. Combine: In a large bowl, combine the pineapple, cucumber, red onion (if using), cilantro, and mint.
  2. Whisk dressing: In a separate bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
  3. Toss and serve: Pour the dressing over the salad ingredients and toss gently to coat. Serve immediately or chill in the refrigerator for at least 30 minutes for enhanced flavours.

Tips:

  • For a spicier kick, add a diced jalapeno pepper to the salad.
  • Substitute the honey with a splash of maple syrup for a slightly different flavour profile.
  • If you don't have fresh herbs, you can use 1/2 teaspoon of dried cilantro or mint.
  • To make it vegan, substitute the honey with maple syrup or agave nectar.
