Introduction

Squid ink pasta offers a unique and flavourful culinary experience. The inky black colour and subtle seafood taste create a truly distinctive dish. This pasta is not only visually striking but also packed with nutrients.

Ingredients

  • 1 pound dried squid ink pasta
  • 1 pound fresh squid, cleaned and cut into small pieces
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup white wine
  • 1 cup clam juice
  • 1/4 cup heavy cream
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the squid ink pasta and cook according to package directions until al dente. Drain and set aside.
  2. Sauté the squid: Heat the olive oil in a large skillet over medium-high heat. Add the squid and cook for 2-3 minutes, or until cooked through. Remove the squid from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the garlic and cook for 30 seconds, or until fragrant. Deglaze the skillet with the white wine, scraping up any browned bits. Add the clam juice, heavy cream, and red pepper flakes (if using). Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens.
  4. Combine: Return the squid to the sauce and toss to coat. Add the cooked pasta and toss to combine.
  5. Serve: Season with salt and pepper to taste. Garnish with chopped parsley and serve immediately.
