Kaiserschmarrn with Tropical Fruits

This recipe puts a fun twist on the classic Austrian dish, Kaiserschmarrn. It features fluffy pancakes torn into bite-sized pieces and served with a medley of tropical fruits.

Ingredients:

  • For the Kaiserschmarrn:
    • 4 large eggs, separated
    • 2 tablespoons granulated sugar
    • 1 cup milk
    • 1 teaspoon vanilla extract1
    • 1 cup all-purpose flour
    • Pinch of salt
    • 2 tablespoons unsalted butter
    • Powdered sugar, for dusting2
  • For the Tropical Fruits:
    • 1 ripe mango, peeled and diced
    • 1 ripe papaya, peeled and diced
    • 1 pineapple, peeled, cored, and diced
    • 1 banana, sliced
    • 1/4 cup shredded coconut, toasted (optional)
    • lime juice to taste.

Instructions:

  1. Prepare the Kaiserschmarrn Batter:
    • In a large bowl, whisk together the egg yolks, sugar, milk, and vanilla extract.
    • In a separate bowl, whisk together the flour and salt.
    • Gradually add the dry ingredients to the wet ingredients, whisking until just combined.

    • Pour the batter into the skillet and cook until the bottom is golden brown, about 2-3 minutes.
    • Use a spatula to tear the pancake into bite-sized pieces.
    • Continue to cook, stirring occasionally, until the pieces are golden brown and cooked through, about 2-3 minutes more.
  2. Prepare the Tropical Fruits:
    • In a large bowl, combine the diced mango, papaya, pineapple, and banana.
    • squeeze lime juice over the fruit to prevent browning and to enhance the flavour.
    • Optionally sprinkle the toasted shredded coconut over the fruit.
  3. Assemble and Serve:
    • Transfer the cooked Kaiserschmarrn to plates.
    • Top with the tropical fruit mixture.
    • Dust with powdered sugar.
    • Serve immediately.

  • Serving Variations: for a richer dessert, the Kaiserschmarrn can be served with a scoop of vanilla ice cream.
  • Sugar control: Because the fruit is already sweet, you might cut the sugar in the Kaiserschmarrn recipe.
