Mussel Soup: A Hearty Seafood Delight

Introduction

Mussel soup is a classic seafood dish that offers a rich and comforting flavour. The combination of tender mussels, flavourful broth, and hearty vegetables creates a satisfying and nutritious meal. This recipe is easy to follow and can be customised to your preference.

Ingredients

  • 2 pounds fresh mussels, scrubbed and debarked
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 1 quart seafood broth
  • 1 cup dry white wine
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste
  • 1/2 cup chopped fresh parsley, for garnish

Instructions

  1. Prepare the mussels: Scrub the mussels under cold water to remove any dirt or debris. Discard any mussels that are open and don't close when tapped.
  2. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic, and cook until softened, about 5 minutes.
  3. Add the broth and wine: Pour the seafood broth and white wine into the pot. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
  4. Add the mussels: Add the mussels to the pot and cover. Cook for 5-7 minutes, or until the mussels open. Discard any mussels that do not open.
  5. Add the cream and herbs: Stir in the heavy cream and thyme. Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with chopped parsley. Serve immediately.
