Introduction

Mussel fritters are a delicious and crispy appetiser or light meal. These fritters are made with a combination of minced mussels, herbs, and a light batter, then fried until golden brown. They are a great way to enjoy the fresh flavour of mussels in a unique and satisfying way.

Ingredients

  • 1 pound fresh mussels, scrubbed and debearded
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped dill
  • 1 large egg, beaten
  • 1/2 cup milk
  • Vegetable oil for frying

Instructions

  1. Cook the mussels: Steam or poach the mussels until they open. Remove the mussels from the shells and discard any that didn't open.
  2. Prepare the batter: In a large bowl, combine the flour, cornstarch, baking powder, salt, and pepper. Stir in the parsley and dill.
  3. Combine the ingredients: Add the beaten egg and milk to the dry ingredients. Stir until just combined.
  4. Add the mussels: Gently fold the cooked mussels into the batter.
  5. Fry the fritters: Heat the vegetable oil in a deep fryer or large skillet to 375°F (190°C). Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Drain and serve: Remove the fritters from the oil and drain on paper towels. Serve immediately with tartar sauce or aioli.
