Sweet and Sour Pork with Pineapple for Chinese New Year


Yields: 4 servings Prep time: 20 minutes Cook time: 15 minutes

Ingredients:

  • 1 pound boneless, skinless pork, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1/4 cup pineapple juice
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger
  • 1/4 cup chopped green onions
  • 1/4 cup diced pineapple

Instructions:

  1. In a large bowl, combine the flour, salt, and pepper. Add the pork and toss to coat.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the pork and cook for 2-3 minutes per side, or until golden brown and cooked through.
  3. In a small bowl, whisk together the pineapple juice, vinegar, sugar, cornstarch, soy sauce, garlic, and ginger.
  4. Add the pineapple chunks to the skillet with the pork. Pour the sauce over the pork and pineapple, and cook for 1 minute, or until the sauce is thickened and coats the pork.
  5. Serve the pork immediately, garnished with green onions.
