Steamed Rice Cakes (Nian Gao) for Chinese New Year

Ingredients:
- 1 cup glutinous rice flour
- 1 cup sugar
- 1 cup water
- 1/2 teaspoon baking powder
- 1/4 cup raisins (optional)
- 1/4 cup chopped walnuts (optional)
Instructions:
- Grease a heat-safe bowl or container that will fit inside your steamer.
- In a large bowl, whisk together the glutinous rice flour, sugar, and baking powder.
- Gradually add the water, whisking until the batter is smooth.
- Stir in the raisins and walnuts, if desired.
- Pour the batter into the prepared bowl.
- Bring water to a boil in a steamer.
- Carefully place the bowl into the steamer, ensuring the water level is below the bottom of the bowl.
- Cover and steam for 30-45 minutes, or until a wooden skewer inserted into the centre comes out clean.
- Let the nian gao cool completely before cutting into pieces and serving.

- To prevent the nian gao from sticking to the bowl, you can line it with parchment paper or banana leaves before pouring in the batter.
