Steamed Rice Cakes (Nian Gao) for Chinese New Year

Nian gao, which translates to "sticky cake," is a popular Chinese New Year treat believed to bring good luck and prosperity in the coming year.1 The cake's stickiness symbolises family togetherness, while its sweetness represents a sweet life.

Ingredients:

  • 1 cup glutinous rice flour
  • 1 cup sugar
  • 1 cup water
  • 1/2 teaspoon baking powder
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Grease a heat-safe bowl or container that will fit inside your steamer.
  2. In a large bowl, whisk together the glutinous rice flour, sugar, and baking powder.
  3. Gradually add the water, whisking until the batter is smooth.
  4. Stir in the raisins and walnuts, if desired.
  5. Pour the batter into the prepared bowl.
  6. Bring water to a boil in a steamer.
  7. Carefully place the bowl into the steamer, ensuring the water level is below the bottom of the bowl.
  8. Cover and steam for 30-45 minutes, or until a wooden skewer inserted into the centre comes out clean.
  9. Let the nian gao cool completely before cutting into pieces and serving.

Tips:

  • To prevent the nian gao from sticking to the bowl, you can line it with parchment paper or banana leaves before pouring in the batter.
  • You can add other ingredients to the nian gao, such as red beans, lotus seeds, or dates.2
  • Nian gao can be stored in the refrigerator for up to a week.
  • To reheat nian gao, you can steam it for a few minutes or microwave it in short bursts.
