This classic Chinese dish is a light and flavourful way to enjoy fresh fish.1 The delicate flavours of the fish are complemented by the fragrant ginger and scallions, resulting in a truly satisfying meal.

Ingredients:

  • 1 pound firm-fleshed white fish (such as cod, halibut, or sea bass), cleaned and patted dry
  • 1 tablespoon soy sauce
  • 1 teaspoon Shaoxing wine (or dry sherry)
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/4 cup thinly sliced ginger
  • 2 scallions, thinly sliced
  • 1 tablespoon chopped cilantro (optional)

Instructions:

  1. Prepare the Fish:
    • Score the fish skin diagonally with a sharp knife, being careful not to cut all the way through.
    • In a small bowl, whisk together soy sauce, Shaoxing wine, and black pepper.
    • Pour the marinade over the fish and let it marinate for 15-20 minutes.
  2. Steam the Fish:
    • Place a steamer rack in a pot and fill with water to about 1 inch below the rack. Bring the water to a boil.
    • Place the fish on a heatproof plate and top with sliced ginger and scallions.
    • Place the plate on the steamer rack and cover the pot tightly.
    • Steam for 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.
  3. Finish and Serve:
    • Remove the fish from the steamer and discard the ginger and scallions.
    • Drizzle the fish with the remaining marinade.
    • Garnish with chopped cilantro, if desired.
    • Serve immediately with steamed rice or noodles.
