Braised Tofu with Shiitake Mushrooms

This dish is a flavourful and satisfying vegan option that's packed with protein and umami goodness. The tofu absorbs the savoury flavours of the shiitake mushrooms and the rich braising sauce, resulting in a truly comforting meal.1

Ingredients:

  • 1 block extra-firm tofu (about 14 oz), cut into 1-inch cubes
  • 1/2 cup dried shiitake mushrooms
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced2
  • 3 cloves garlic, minced
  • 1 inch piece of fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon brown sugar
  • 1/4 cup vegetable broth
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • Chopped green onions, for garnish

Instructions:

  1. Prepare the Shiitake Mushrooms:
    • Soak the dried shiitake mushrooms in warm water for 30 minutes, or until softened.
    • Drain the mushrooms, reserving the soaking liquid. Squeeze out excess water from the mushrooms and thinly slice them.
  2. Prepare the Tofu:
    • Press the tofu between paper towels to remove excess moisture.
    • Cut the tofu into 1-inch cubes.
  3. Make the Braising Sauce:
    • In a small bowl, whisk together soy sauce, mirin, brown sugar, and reserved shiitake mushroom soaking liquid.
    • In a separate small bowl, whisk together cornstarch and water to make a slurry.
  4. Cook the Tofu and Mushrooms:
    • Heat the vegetable oil in a large skillet or pot over medium heat.
    • Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
    • Add the onion, garlic, and ginger to the skillet and cook until softened, about 5 minutes.
    • Add the sliced shiitake mushrooms and cook for another 5 minutes, or until fragrant.
    • Pour the braising sauce into the skillet, bring to a simmer, and then add the tofu back to the skillet.
    • Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the tofu is heated through and the sauce has thickened slightly.
    • Stir in the cornstarch slurry and cook for 1-2 minutes, or until the sauce has thickened to your desired consistency.
  5. Serve:
    • Garnish with chopped green onions and serve hot over rice or noodles.
