Braised Tofu with Shiitake Mushrooms
This dish is a flavourful and satisfying vegan option that's packed with protein and umami goodness. The tofu absorbs the savoury flavours of the shiitake mushrooms and the rich braising sauce, resulting in a truly comforting meal.1
Ingredients:
- 1 block extra-firm tofu (about 14 oz), cut into 1-inch cubes
- 1/2 cup dried shiitake mushrooms
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced2
- 3 cloves garlic, minced
- 1 inch piece of fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon brown sugar
- 1/4 cup vegetable broth
- 1 teaspoon cornstarch
- 1 tablespoon water
- Chopped green onions, for garnish
Instructions:
- Prepare the Shiitake Mushrooms:
- Soak the dried shiitake mushrooms in warm water for 30 minutes, or until softened.
- Drain the mushrooms, reserving the soaking liquid. Squeeze out excess water from the mushrooms and thinly slice them.
- Prepare the Tofu:
- Press the tofu between paper towels to remove excess moisture.
- Cut the tofu into 1-inch cubes.
- Make the Braising Sauce:
- In a small bowl, whisk together soy sauce, mirin, brown sugar, and reserved shiitake mushroom soaking liquid.
- In a separate small bowl, whisk together cornstarch and water to make a slurry.
- Cook the Tofu and Mushrooms:
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- Add the onion, garlic, and ginger to the skillet and cook until softened, about 5 minutes.
- Add the sliced shiitake mushrooms and cook for another 5 minutes, or until fragrant.
- Pour the braising sauce into the skillet, bring to a simmer, and then add the tofu back to the skillet.
- Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the tofu is heated through and the sauce has thickened slightly.
- Stir in the cornstarch slurry and cook for 1-2 minutes, or until the sauce has thickened to your desired consistency.
- Serve:
- Garnish with chopped green onions and serve hot over rice or noodles.
