Vegetable Spring Rolls: A Crispy and Healthy Delight

Instructions:
Preparing the Filling:
- Sauté Vegetables: In a large skillet or wok, heat a little oil over medium heat. Add the garlic and ginger, and sauté for 30 seconds until fragrant.
- Add Vegetables: Add the carrots, cabbage, and bean sprouts to the pan, stirring frequently until the vegetables are softened.
- Season the Filling: Add the soy sauce, sesame oil, and black pepper to the vegetables and stir to combine. Remove from heat and let cool.
Assembling the Spring Rolls:
- Wet the Wrapper: Lightly wet one edge of a spring roll wrapper with water.
- Add Filling: Place a spoonful of the vegetable filling in the centre of the wrapper.
- Roll the Spring Roll: Fold the bottom edge of the wrapper over the filling, then fold in the sides, and roll up tightly.
- Seal the Spring Roll: Brush the top edge of the wrapper with water to seal it.
Frying the Spring Rolls:
- Heat Oil: Heat about 1 inch of oil in a deep fryer or large pot to 350°F (175°C).
- Fry the Spring Rolls: Carefully add a few spring rolls to the hot oil, being careful not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes per side.
- Drain: Remove the spring rolls from the oil and drain on paper towels.
Serving:
Serve the spring rolls hot with your favourite dipping sauce, such as sweet chilli sauce, soy sauce, or a mixture of both.
