Roasted Brussels Sprouts with Bacon and Cranberries
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 4 slices bacon, chopped
- 1/4 cup dried cranberries
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Step 1: Preheat oven and prepare Brussels sprouts
Preheat oven to 400°F (200°C). Trim and halve Brussels sprouts.
Step 2: Cook bacon and brown Brussels sprouts
Cook bacon in a large skillet over medium heat until crispy. Remove bacon from pan, leaving drippings. Add Brussels sprouts to pan and cook, stirring occasionally, until browned on all sides.
Step 3: Add cranberries and bacon
Stir in cranberries and return bacon to pan.
Step 4: Roast Brussels sprouts
Transfer Brussels sprouts mixture to a baking sheet and roast in preheated oven for 20-25 minutes, or until Brussels sprouts are tender.
Step 5: Serve
Serve immediately.

Tips
- For extra flavour, add a pinch of red pepper flakes or a drizzle of balsamic vinegar to the Brussels sprouts.
- You can also use pancetta or prosciutto instead of bacon.
- If you don't have dried cranberries, you can use fresh cranberries. Just be sure to rinse them well and remove any stems.
- These Brussels sprouts can be made ahead of time and reheated. Just be sure to store them in an airtight container in the refrigerator.
