Lemon-Herb Roasted Pork Loin

Ingredients:

  • 3-pound boneless pork loin roast
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 lemon, thinly sliced

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, rosemary, thyme, salt, and pepper.
  3. Rub olive oil mixture all over pork loin roast.
  4. Place pork loin roast in a roasting pan and insert lemon slices into slits in the meat.
  5. Roast pork loin for 45-50 minutes, or until internal temperature reaches 145°F (63°C).
  6. Let pork loin rest for 10 minutes before slicing.
