Lemon-Herb Roasted Pork Loin
Ingredients:
- 3-pound boneless pork loin roast
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 lemon, thinly sliced
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine olive oil, rosemary, thyme, salt, and pepper.
- Rub olive oil mixture all over pork loin roast.
- Place pork loin roast in a roasting pan and insert lemon slices into slits in the meat.
- Roast pork loin for 45-50 minutes, or until internal temperature reaches 145°F (63°C).
- Let pork loin rest for 10 minutes before slicing.
