Vertical Farm Falafel Wraps

These flavourful wraps showcase the versatility of vegetables grown in vertical farms. Crispy falafel made from fava beans and chickpeas are combined with fresh greens and a creamy tahini sauce for a satisfying and nutritious meal.
Ingredients:
For the falafel:
- 1 cup dried fava beans
- 1 cup dried chickpeas
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
For the wraps:
- 4 large flour tortillas
- 1 cup mixed greens (e.g., spinach, arugula)
- 1/2 cup chopped cucumber
- 1/4 cup chopped tomato
- 1/4 cup tahini sauce
Instructions:
- Prepare the falafel: Soak the fava beans and chickpeas in water overnight. Drain and rinse. In a food processor, combine the soaked beans, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper. Pulse until finely chopped but not pasty. Shape the mixture into small balls.
- Cook the falafel: Heat oil in a deep fryer or large skillet over medium-high heat. Fry the falafel balls until golden brown and crispy. Drain on paper towels.
- Assemble the wraps: Place a tortilla on a flat surface. Add a handful of mixed greens, cucumber, and tomato. Top with several falafel balls. Drizzle with tahini sauce.
- Serve: Fold up the tortilla and enjoy immediately.
