These dumplings offer a unique combination of spicy kimchi and nutritious edamame, wrapped in a whole-wheat dough for a wholesome and satisfying meal.
Ingredients:
For the dough:
- 2 cups whole-wheat flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1 tablespoon olive oil
For the filling:
- 1 cup kimchi, chopped
- 1 cup cooked edamame
- 1/4 cup chopped scallions
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
For serving:
- Soy sauce
- Rice vinegar
- Sesame oil
Instructions:
- Make the dough: In a large bowl, combine the flour and salt. Add the warm water and olive oil, and stir until a dough forms. Knead the dough for 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
- Prepare the filling: In a medium bowl, combine the kimchi, edamame, scallions, soy sauce, sesame oil, and red pepper flakes. Mix well.
- Roll out the dough: Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles of dough using a 3-inch cookie cutter.
- Fill the dumplings: Place a spoonful of filling in the centre of each dough circle. Fold the dough over the filling and pinch the edges together to seal.
- Cook the dumplings: Bring a large pot of salted water to a boil. Add the dumplings and cook for 3-5 minutes, or until they float to the surface.
- Serve: Serve the dumplings hot with a dipping sauce made of soy sauce, rice vinegar, and sesame oil.
