Salmon Misoyaki Pizza

Ingredients:

For the Pizza Dough:

1 1/2 cups (195g) all-purpose flour

1 teaspoon (3g) active dry yeast

1/2 teaspoon (2g) sugar

1/2 teaspoon (2g) salt

1 tablespoon (15ml) olive oil

3/4 cup (180ml) warm water (about 105°F/40°C)



For the Miso Glaze:

  • 2 tablespoons (28g) white miso paste
  • 1 tablespoon (15ml) mirin
  • 1 tablespoon (15ml) sake
  • 1 tablespoon (15ml) honey
  • 1 tablespoon (15ml) soy sauce
  • 1 tablespoon (15ml) water

For the Toppings:

  • 1 salmon fillet (about 6-8 oz/170-230g), skin on
  • 1 tablespoon (15ml) vegetable oil
  • 1 small onion, thinly sliced
  • 1/4 cup (60g) shredded mozzarella cheese
  • Sriracha mayonnaise (for serving, optional)
  • Fresh chives, chopped (for garnish, optional)

Instructions:

  1. Make the Pizza Dough:
    • In a large bowl, combine the flour, yeast, sugar, and salt. Whisk to combine.
    • Add the olive oil and warm water to the dry ingredients. Stir with a wooden spoon until a shaggy dough forms.
    • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
    • Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour, or until doubled in size.
  2. Prepare the Miso Glaze:
    • In a small bowl, whisk together the white miso paste, mirin, sake, honey, soy sauce, and water until smooth. Set aside.
  3. Cook the Salmon:
    • Heat the vegetable oil in a large skillet over medium-high heat. Season the salmon fillet with salt and pepper.
    • Place the salmon skin-side down in the hot skillet. Sear for 3-4 minutes, or until the skin is crispy.
    • Gently flip the salmon and cook for an additional 2-3 minutes, or until cooked through (depending on the thickness of the fillet).
    • Once cooked, remove the salmon from the pan and set it aside.
  4. Assemble the Pizza:
    • Preheat your oven to 475°F (245°C). Lightly grease a baking sheet or pizza stone.
    • Punch down the risen dough and roll it out on a lightly floured surface to a 12-inch (30cm) circle. Transfer the dough to the prepared baking sheet.
    • Spread the miso glaze evenly over the dough, leaving a 1-inch (2.5cm) border around the edge.
    • Thinly slice the cooked salmon and arrange the slices over the miso glaze.
    • Top the pizza with the sliced onions and sprinkle with the shredded mozzarella cheese.
  5. Bake the Pizza:
    • Bake the pizza for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Serve and Enjoy:
    • Slice the pizza and serve immediately. Enjoy with a drizzle of sriracha mayonnaise for an extra kick (optional). Garnish with chopped fresh chives for a touch of colour (optional).
