Poppy Seed Noodles Recipe

Ingredients:

For the Noodles:

1 cup tapioca pearls (also known as boba)

4 cups water

For the Coconut Sauce:

1 (13.5 oz) can unsweetened coconut milk

1/2 cup whole milk

1/4 cup sugar

2 tablespoons poppy seeds

1 tablespoon cornstarch

1/4 teaspoon vanilla extract

Pinch of salt

  • For Garnish (Optional):
    • Toasted coconut flakes
    • Freshly grated nutmeg

Instructions:

  1. Cook the Tapioca Pearls: In a medium saucepan, bring the water to a boil. Add the tapioca pearls and cook according to package instructions, usually for about 15 minutes, or until translucent with a chewy consistency. Drain the cooked tapioca pearls and rinse under cold water to stop the cooking process.
  2. Make the Coconut Sauce: In a separate saucepan, combine the coconut milk, whole milk, sugar, poppy seeds, cornstarch, vanilla extract, and salt. Whisk well to ensure no lumps from the cornstarch.
  3. Heat and Thicken: Heat the coconut milk mixture over medium heat, whisking constantly. Bring the mixture to a simmer and continue whisking until it thickens, about 3-5 minutes. The sauce should have a smooth and creamy consistency.
  4. Combine and Serve: In a serving bowl, combine the cooked tapioca pearls with the hot coconut sauce. Gently toss to coat the pearls evenly.
  5. Garnish and Enjoy: Serve the Vaisili Mohnnudeln warm or at room temperature. Garnish with toasted coconut flakes and a sprinkle of freshly grated nutmeg for an extra touch of flavour (optional).

Tips:

  • You can adjust the amount of sugar to your preference.
  • For a richer flavour, substitute heavy cream for the whole milk in the coconut sauce.
  • If the coconut sauce thickens too much, add a splash of additional milk to thin it slightly.
  • Feel free to experiment with other toppings like chopped nuts or fresh berries.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
