Tutorial: Achieving the Nebula Effect

  1. Base Coat: Apply a smooth, chilled crumb coat to your cake. Then, frost the entire cake in a solid layer of deep navy blue buttercream and chill until firm.
  2. Add Colour Patches: Using an offset spatula, randomly dot patches of vibrant purple, bright violet, and a slightly lighter blue buttercream over the navy base.
  3. Blend (The Watercolour Technique): Take a bench scraper, hold it flat against the cake side, and spin the turntable smoothly. Drag the colours together just enough to blur the edges and create a soft, swirling nebula effect. Avoid over-scraping, or the colours will turn into a muddy grey.
  4. Create the Stars: Mix silver edible lustre dust with a few drops of vodka or lemon extract to create a paint. Dip a food-safe paintbrush into the mixture, hold it near the cake, and flick the bristles with your finger to splatter fine silver "stars" across the surface.




Tips for Flawless Fondant

  • Condition the Paste: Always knead your fondant thoroughly on a surface lightly dusted with cornstarch or powdered sugar. It should feel smooth, pliable, and warm—like play-dough—before you attempt to roll it out.
  • Prevent Air Bubbles: If you notice air bubbles trapped under the surface while rolling, pop them immediately with a sterile pin at an angle, then smooth the air out with your fingers.
  • The "Elephant Skin" Fix: If the fondant begins to dry out and develop tiny cracks along the edges while draping, gently rub a tiny smear of vegetable shortening over the area to smooth the texture.
  • Work Quickly and Lift: When draping the fondant over a cake, immediately use your hands to lift the pleats out and press the fondant against the cake working from the top down, preventing tears caused by gravity.
